holy cannoli

Italian cooking is one of my favorite types of cuisine. 
I love good pasta, pizza, creamy sauces, red sauces, cheese and dessert!
I was craving cannoli one weekend, so I gave in and decided to make it. 
I couldn't find a recipe that I liked so I created my own. 
Btw, it's so easy when you don't make your own shells.



6-8 cannoli shells
1/2 cup whipping cream
1/2 teaspoon vanilla
1 1/2 cups ricotta cheese 
1/4 cup powdered sugar
1/4 teaspoon cinnamon
1/4 cup chocolate chips 

Start by whipping your cream and vanilla together until fluffy. Then stir in the ricotta, powdered sugar and cinnamon. Mix well. Put the filling in a pastry bag (or a plastic bag with the corner cut off) to fill the shells just before serving. Melt chocolate chips and drizzle over stuffed shells. Chill for a few minutes to harden chocolate. 
It's not that easy to find cannoli shells, but it's not too difficult either. And, unless you like soggy shells, fill them just before you plan on eating them. They're better the way they were meant to be: crunchy.

oh hello 2014

Wow. Well, last semester was crazy busy. It's been a while. Maybe I'll have more time to blog this semester... or at least this year. At any rate, last year I decided I wanted to make a short video of things we did from that year. Just a compilation of short clips to document our life together. I plan on making one every year.
2013 was really busy for us. Not filled with adventures like 2012, but filled with school, camp, ministry and learning experiences which we are so thankful for. I like to make these videos to remind us of where we've been and to just see how life changes.
